Easy Crockpot Vegetarian Chili

I’ve been trying to clean out my pantry lately, in the same way I cleaned out my freezer a couple months ago. It’s taking a little longer, but over the next few days I’ll share some of the things I found in there and what I made with them.

The question: What to do with cans of black beans, white beans, kidney beans, and diced tomatoes? The answer: Make Erin’s vegetarian chili. It takes just two hours to cook in the crockpot and no time to prepare—cutting up a green pepper and an onion is the worst of it. It’s delicious, and it makes a lot of servings—Erin says four, but it looks more like eight to me.

Of course, freezing half the chili means we’re filling our freezer back up. But I guess I’d rather fill it with homemade frozen meals than storebought ones.

You’re right about the serving size – especially since half of the members of my family won’t eat it. We’ll sometimes eat the leftovers in chili burritos, and it’s also a good meal when you have company over.

We LOVE chili!! I can definitely say veg chili is our favorite! Remind me to share our recipe sometime…it comes from Karen Allrich’s “Cooking By The Seasons” – a pagan vegetarian cookbook I picked up a while ago : )

This recipe would not last long in our house, would probly do an extra can of black beans, 28oz can of tomatoes, a whole can of corn, salt, pepper, probly some cayenne or crushed red pepper to kick it up : ) Chili freezes VERY well : ) If I was planning on eating it for lunches, though, I would just stick it in the fridge for up to a week.

I second the burritos!! yummmm!! I am so hungry now and it’s only 9am! I want CHILI!!! : )

Yes, please share your recipe—and anything else from that cookbook! I’ve got a cookbook called In Season: Cooking with Vegetables and Fruit, but I haven’t tried many recipes for it yet. I’m all about the crockpot right now.

Yeah, I might eat more per serving if it were just that, but I love my cornbread.
